What better way to spice things up during lockdown than to plan theme evenings with the family! It not only makes your meals more interesting, but it gives everyone in the house a reason to put on pants… or a poncho at least.
So, in the spirit of South Africa entering Level 3 of lockdown, put some tequila on your shopping list and get yourself in the mood to cook some yummy vegan Mexican food. Here are some great ideas for planning a winning Mexican night:
Choose your Colour Scheme - Think yellows, oranges, reds and greens… basically the colours of chillies or peppers! Print out some cute Mexican themed banners or make your own, get some little sombreros and set up a colourful table with striped cloths, paper flowers and lanterns.
Get ready for Mexican tacos – Prepare guacamole, salsa (Here at Vegan Street, we have some amazing vegan Salsa made by Mercado ), spiced black beans, hummus, pesto (try our Pesto Princess or Mercado Range!), make some tortilla wraps, prepare some delicious lentil, jackfruit or Urban Vegan mincemeat taco filling, and you are ready to go!
Nibble on some Nachos – Prepare a grill pan with Santa Anna’s Corn chips or the Mercado Tortilla Chips, top with grated vegan cheese and bake in the oven. Serve with guacamole and your favourite pesto, or some spicy Mercado Jalapeno or Habanero Sauce.
